Chimera Rooftop

"Chimera " means an unrealizable dream, this is where the concept for Chimera Rooftop comes from. We are the first Zero Waste Cocktail Bar in Puerto Rico, we don't use any type plastic one use products, our straws are hay, we compost all the garnishes and paper used at the bar plus the dry leaves from our plants and garden. We have a small Kitchen-Bar Garden on the back terrace where we get most of our aromatic garnishes and herbs. The compost from the bio-waste of the bar goes to feed our garden and decorative plants. Our cocktail menu includes guest cocktails from different countries and includes a large variety of classic and house recipes.
Our rooftop has an inner air conditioned area, a roofed terrace with ample seating and an outdoor patio for smokers and star gazing. We smoke our meats in house, and some of our food items like our acclaimed Smoked Edamame.
