Exploring Culinary Paths: Share your journey of becoming a chef in Puerto Rico

What sparked your passion for cooking?  

I started my culinary journey in 2007 with my own business, The Fresh Grill. I didn't have any formal culinary education, but I had a great passion for cooking. Since I was very young, I was drawn to it. I would always prepare dishes at home, read books, and watch the Food Channel Additionally, I started fishing at a young age, which inspired me to look for recipes and cook the catch of the day.

Culinary Style and Philosophy

How do you define your approach to cooking? Can you explain your culinary philosophy?  

For me, cooking should be simple in composition and rich in technique and history. Knowing the ingredients and then, with much respect, turning them into something delicious.

How do you strike a balance between traditional methods and innovative practices in your kitchen?  

Our culinary creations go hand in hand with seasonal products, based on what our land and sea provide. We always strive to maintain a balance between new trends and our cultural roots.

What is one signature dish that every visitor should experience at your restaurant or through your culinary services?

To really enjoy Bacoa order multiple plates for the table and share with friends and family. 

Puerto Rican Cuisine Essentials  

From your perspective, which dish quintessentially represents Puerto Rican cuisine and why?  

I think there's nothing more Puerto Rican than a good plate of lechón asado a la vara (roasted pork on a spit) with arroz con gandules (rice and pigeon peas), pasteles, and guineítos en escabeche (pickled green bananas). 

What dish would you recommend to someone new to Puerto Rican cuisine?  

The very first place to visit once you get off the plane should be Piñones, to eat bacalaítos (codfish fritters) and alcapurrias

Do you have any advice for individuals dining in Puerto Rico for the first time? 

For that first dinner, I'd highly recommend Bacoa, of course—it's an excellent choice.

Chef René's Hometown

Which municipality in Puerto Rico do you hail from?  

I grew up in the town of Dorado. 

What do you cherish most about your hometown?  

It's a beautiful town, with lovely beaches, good waves, great fishing, golf courses, and good food. 

Where should visitors go, or what activities should they partake in when visiting your town?  

In Dorado, there's a lot to do, from visiting Balneario El Ojo del Buey and El Laberinto at Finca Pastoreo to dining at El Ladrillo in town, Villa Dorada D'Alberto, or Coa at Dorado Beach Resort. To me, the Dorado Beach East Golf Course is the prettiest in all of Puerto Rico.
